Gluten-Free Peanut Butter Brownies

Ingredients

For Brownie Base
  • 1 cup Semisweet Chocolate Chips
  • 8 Tbsp (1 stick) butter, cut into quarters
  • 3 Tbsp Cocoa Powder
  • 3 Eggs
  • 1 1/4 cups Sugar
  • 2 tsp Vanilla Extract
  • 1/2 tsp Salt
  • 1 cup All-Purpose GF flour (I use Bob’s Red Mill 1-to-1 Gluten-Free Flour)
For Peanut Butter Swirl
  • 3 Tbsp Butter, melted
  • 1/2 cup Peanut Butter
  • 1/3 cup Powdered Sugar
  • 1/4 tsp Salt
  • 1/2 tsp Vanilla Extract

Instructions

  1. Preheat oven to 350°F. Coat an 8-inch baking pan with cooking spray and line with foil or parchment paper.
  2. In a bowl, microwave chocolate and butter for 30 seconds. Stir and microwave for another 30 seconds. Stir and repeat until melted. Whisk in cocoa powder until smooth and set aside to cool.
  3. For peanut butter swirl, combine peanut butter, powdered sugar, salt, and vanilla in a bowl and stir until smooth. Set aside.
  4. In a large bowl, whisk the sugar, salt, vanilla, and eggs until combined. Whisk melted chocolate mixture into the egg mix. Stir in the flour until just combined. Pour the mixture into the prepared pan. Drop dollops of the peanut butter mixture on top of the brownie batter. Use a butter knife to swirl in the peanut butter.
  5. Bake until a toothpick inserted comes out mostly clean, about 45 minutes. Cool on a wire rack for an hour. Pull from pan using foil liner. Cut into 2-inch squares when ready to serve.
