Crispy, yet fluffy gluten-free waffles, perfect for any breakfast occasion, so incredibly quick and easy.
Ingredients
- 3 1/2 cups gluten-free flour mix
- 2 Tbs baking powder
- Pinch of salt
- 5 eggs (separated)
- 3 1/4 cup milk
- 1/2 cup melted butter, unsalted
Instructions
- Pre-heat your waffle maker. Spray with some neutral oil just in case of sticking.
- Combine your dry ingredients in a large bowl, whisking together to combine.
- Separate your eggs, placing the egg yolks in with the dry ingredients and your egg whites into a different small separate bowl. Set that bowl aside.
- Whisk the egg yolks, milk, and melted butter into the dry ingredients, if the batter becomes too thin, add a bit of flour until you get your desired consistency. If too thick, add a dash of milk.
- With a hand-held mixer or a whisk, beat your egg whites in the separate bowl until stiff peaks form. (Make sure to watch them carefully, you don't want egg whites that are so thick they begin to separate)
- Fold your egg whites into the waffle batter until mixed throughout.
- Spoon about 2/3 cup of batter into your waffle maker at a time. Cook until done, top with your choice of topping! Enjoy!
